It doesn't get any crunchier than this! Our South Tyrolean "Kaminwurzen", made from finely seasoned meat, are really something to bite into. Probably the best known raw sausage speciality from the Alps is smoked and then left to mature. It is eaten cold and best with cheese and Schüttelbrot, as a mountain tour snack or in between for the small hunger.
