Human instead of machine

This is how our South Tyrolean Speck PGI is produced.

We take it into our own hands! Raich Speck is not an industrial company, but a small family business with over 100 years of experience in the traditional artisan production of bacon. This is probably one of the reasons why we are one of only 29 companies allowed to produce South Tyrolean Speck PGI. The "protected geographical indication" does not only stand for the country of origin South Tyrol, but also guarantees a strict control of the meat selection, the spice mixture and the maturing process.

 

And this is how our bacon gets its "raichigen" aroma:

    First, only natural and high-quality raw materials are used. After all, only good things can come from good!
    Second, Raich Speck is seasoned according to a very special, top-secret family recipe. Only local herbs and additives are used for the secret taste miracle.
    Thirdly, we do not use high amounts of salt, as is common in industrial production. Our bacon is only lightly salted, lightly smoked and treated to plenty of fresh mountain air. Then it is allowed to rest and mature on the Töll until it is beautifully gschmackig and lands on your Speckbrettl. And you will notice: From "less" has become all the more pleasure for you!
