Sealed quality from South Tyrol.

Only when the South Tyrol mark is burned into the rind is everything as tradition demands. Only now is the bacon a genuine "Südtiroler Speck g.g.A.". The abbreviation PGI stands for "protected geographical indication." The European Union grants the distinction to selected products that are produced according to traditional methods in a specific area. "Südtiroler Speck g.g.A." has been allowed to be called since 1996 only that ham whose production from the drumstick and according to traditional methods takes place in South Tyrol. The principle has always been: little salt, little smoke, lots of fresh mountain air - and even more time. Only when all quality criteria have been met and all controls have been passed, the bacon may be named after its origin South Tyrol.
